Blue and Bay Shrimp on Crackers
1 cup small salad shrimp, cooked and chilled
1 T. low fat mayonnaise
1 T. blue cheese, finely chopped - more or less depending on your taste, but don't overpower the shrimp.
1-1/2 tsp. strawberry jam, melted for 10 seconds in the microwave. Mix all together and serve on crackers.
Roasted Pepper Spread on Whole Grain Turkey Sandwich or Veggies
1/2 cup chopped, roasted red peppers, seeds and skin removed.
1/2 cup low-fat, plain yogurt
1/4 cup low or no fat sour cream
1 roasted chipotle pepper in adobo sauce plus 1/4 tsp of the sauce, (more depending on your taste for heat).
2 cloves fresh garlic
1 whole shallot, peeled and chopped and sauteed with garlic in 1 tsp. canola oil for a minute, to mellow flavors.
1/4 tsp. smoked Spanish paprika
1/4 tsp dried Mexican oregano - any oregano is fine or leave it out if you don't have it, not a deal breaker.
Salt and ground black pepper to taste.
Put all ingredients in food processor and pulse until blended. Put in covered bowl and refrigerate for at least a half hour, longer is better, to let flavors develop. Enjoy!
